how do you like your eggs...?

i love this question!  it has such a comforting ring to it...  

since being a little bit addicted to instagram i have been snapping my egg obsession with my iphone.  i eat eggs most week mornings.  my favourite way to have eggs is usually fried but i do go through a scrambled phase from time to time.  i also love baking eggs on the weekend with whatever i find in the fridge that goes well...mostly leftovers!

i am often asked 'how do you have the time to make eggs in the morning when you have two children to get to school'?  i think it is just having it all there on hand...i have a bowl of fresh eggs sitting on the bench, i use the same little frypan each morning, i always have a supply of ingredients like sliced meats, beans, creamed corn, fetta, avocado, tomatoes, rocket and fridge leftovers handy...  it generally takes less than 5 minutes to cook and then on the table to eat!

you can see i also love adding sheeps fetta to my eggs...such a delicious combo and i find when i eat eggs for breakfast i power on through the morning until lunch without snacking...

i agree completely! i have 2 eggs every morning and it gets me through till at least 1pm. i also alternate between fried and scrambled. yum yum!

Poached with Chilli sauce! Also scotch eggs are great but No one makes them anymore. Would love to see a recipe for scotch eggs if you do them!

Well, just about every one of the above pics looks familiar thanks to Instagram. Me? I reckon I eat fried eggs more than any other style. Sunny side up or over easy with still runny yolks. Not a huge fan of omelettes, unless of course they're kept simple, not over-cooked and loaded with, err, goat cheese and a few chopped chives. Maybe some truffle?

It's this humble little package of goodness that is going to stop me being vegan - how could I ever give up eggs?! I agree - so easy and quick to make eggs. Yuuuum! So in love with all your shots. Did you see the Heston episode on eggs? Divine. Sublime.

I came to tell you how much I love your story about the palm tree gathering. I too came to a screeching halt
when I saw this one on the side of the road a few blocks from home. Of course it wouldn't fit into the car so
I went back on foot and proceeded to drag it home. It's as tall as I am and despite wanting to display
it on the table, it's too big. It's now taking up the entire balcony : )

It's funny because I don't think I've ever seen a palm tree in my area.
