friday fizz w cinnamon & honey tea cake



baking has never been my strong point & this tea cake recipe was given to me by my friend kellie with the promise that it is blending all ingredients & simply putting into the oven.  kellie said the recipe is fool proof & that you can give the cake your own stamp by adding apple, sultanas, lemon zest etc...i added honey.  the cake literally took me 10mins prep with approx 30mins baking time...i served the cake at mady's for friday afternoon tea...the children loved it...mady & i enjoyed the cake with aperitif to match...thanks kellie. x

cinnamon tea cake
ingredients - 125gms softened butter, 2 eggs, 1 level tblspn cornflour, 3/4 cup sugar, 1 cup SR flour, 1/4 cup milk + (i added 2 tblspn honey)
prepare - place all ingredients in mixing bowl & beat for a few minutes till mixed well.  place mixture in a greased round cake tin (20cm).  bake approx 40-45 mins until golden.  cool on wire tray.  while hot, drizzle with honey & sprinkle with cinnamon sugar.

This cake looks similar to one I made a very very long time ago. I think I put apple in mine
