calcagno sheep milk cheese

i met baker lou in new farm park one recent sunday.  lou only eats sheep or goat milk cheeses so her choice for our cheese plate was calcagno.  lou bought the cheese from samios foods (36 annerley rd, woolloongabba). 

calcagno was delicious - nutty, salty & strong....we ate it with spelt crackers, oatcakes, apple, tamari almonds & manuka honey...washed down with tumblers of rose wine.

cheese notes - calcagno is a hand-made sheep milk cheese made from the milk of animals that are sotto cielo (under the sky) & grazing on pasture. the cheese is made in a grana style in sardinia & is aged for 4-6 months in the cool caves of casa madaio in the campania region of italy.
