i have been helping organise my works trade night for the past 3 months. we held it at the river room over looking the brisbane river @ southbank. approx 200 food industry clients attended. much of our imported & local products were sampled, one being our prize 24mth old reggiano! it is a blend of buffalo & cows milk - nutty, salty, creamier than normal reggiano & brilliant dipped in 6yr old balsamic. we cut the 36kilo wheel of reggiano in half and guests chunked into one side to sample. it looked brilliant!
