burrata w vine ripened tomatoes, basil & extra virgin olive oil

i have long said that my last supper will be insalata caprese - i adore buffalo mozzarella!  the taste of buffalo mozzarella torn up with beautiful vine ripened tomatoes, torn basil, fruity olive oil drizzled, flaked sea salt & cracked pepper is.......heaven!!!!

fresh buffalo mozzarella (from italy) is by far the best (for me) however when in australia there are alternatives.  you can get fresh buf moz made in australia + you can buy frozen buf moz imported from italy.  the frozen thaws out well & is certainly good enough. 

i have wanted to try burrata for some time & finally bought some from my work.  burrata is alike to buf mozz....it is a fresh cheese made with milk & cream.....the outer is firm mozzarella whilst the inside is oozy cream.  i thawed out the burrata (frozen from italy) & served it caprese style.  this burrata was made from cows milk (some are made with buf milk).  it was good but not as good as my beloved buffalo mozzarella!
