i love blogging on the weekend.....sunday afternoons are heaven! my littlest girl is having a mid afternoon sleep on the lounge, my eldest is drawing massive love hearts in her art book, my husband is reading the paper & i am happily blogging...
i thought my recent mid week meal was worth a mention...(pasta again).....i used my favourite shape - orecchiette. i had left over roast lamb (whiched i chopped up into little pcs)....i pan-fried the lamb, chopped garlic & olive oil until brown....i added a cup of red wine & allowed to reduce down.....then i added two heaped tbl spoons of sun dried tomato pesto & a btl of passata.....i allowed the mix to bubble away on low for almost an hr....sometimes adding a qtr cup of water to loosen.....i cooked 3 cups of orecchiette until al dente.....i threw in several big handfuls of spinach into the bubbling ragu, stir through + at the same time turn the heat off. drain the orecchiette & add to the ragu saucepan.....mix through thoroughly & serve w cracked pepper......i didn't add any parmesan as the ragu is rich.

Sounds and looks lovely - great way to use leftovers and such a rich and satisfying dish too.
