baker lou is very special to me....her friendship is one that is always there....through her busy work schedule (lou bakes for wray organic & campos coffee, fortitude valley) and my life of children/work we manage to always pick up where we left off. her passion for what she does is something i greatly admire. her mission is to revive ancient grains (forgotten by many of us) & bake beautiful things with them. grains like spelt, kumut, quinoa, amaranth, millet, rice flour, besan flour etc are apart of her ingredients along with focusing on sugar free products such as rice syrup, agave syrup, barley malt syrup & maple syrup.....she is also using & excited about rapadura sugar (sugar shaved from the cane).....among the pics are her gf gingerbread cake, gf almond brownie, vegan cake, sweet potato & carob cake & gf b&b pudding.....lou is working on her own cook book.....i will let you know when she gives birth to it!!! It will be unique, fabulous, full of style and a classic in its own right!.....oh also lou is a testament to the saying "bake from the heart"....
