festive pasta




i made this pasta for a girlfriend who leans more toward the vegetarian side of things.  she had come to visit melbourne on holiday with her two beautiful children and this was her little farewell lunch.  it was delicious and she was very happy with it.  super easy to make and so perfect for this time of year!  i also made a big bowl of spaghetti bolognaise for the children & that was devoured by the 4 hungry noisy ones!

roasted cherry tomatoes with chilli, oregano, ricotta & basil
roast on a high oven 3 punnets of cherry toms w olive oil & oregano + pepper/salt until blistering hot & skins break...leave aside.  cook your favourite pasta the way you like it, drain.  add pasta to the roasted cherry tomato oven tray & toss through.  add 500g of room temp ricotta & torn basil leaves.  stir well.  serve immediately with copious amounts of cracked pepper...& vino!
