i have been craving polenta for a while and the weather is right now perfect for it. i made this stew & it was delicious, wholesome, comforting & completely inspired around the thyme infused soft polenta!
chicken, olive & anchovy stew with thyme infused soft polenta
stew ingredients - 8 chicken drumsticks, olive oil, 1 cup of black olives, 5 anchovies whole, 2 smashed/chopped garlic cloves, 1 diced onion, thyme chopped, 1/2 btl white wine, 1 cup of chicken stock, 1 btl passata, cracked pepper
prepare - pan fry drumsticks in non stick pan, set aside once browned. brown garlic & onion with some olive oil in the same pan. add wine to pan & reduce by half. add all ingredients to a large pot & simmer for up to 1.5hrs...season to taste.
soft polenta ingredients - 1.5 cups instant polenta, 2 tblsp chopped thyme, 4 cups chicken stock...extra water if needed...salt to taste, cracked pepper, 1/2 cup of grated pecorino
