roasted pumpkin w hommus, olive oil & flat leaf parsley

this dish was inspired by philip johnson, ecco bistro (there is a recipe in his 1st cook book on pg 129).

great simple dish & delicious served w lamb.  i made this recently & it was easy & tasty!

Made something similar to this a few days ago with chevre instead of hummus. It was so very nice. Love your spread (and the orange kitty several posts down)!
