it is rare in our house for there not to be a bowl of vine ripened tomatoes on the bench.....i buy them every week & usually buy way too many. to use up the excess i particularly like slow roasting them - i cut the toms & slow bake them with garlic gloves, oregano, olive oil, sea salt & cracked pepper. recently i served with grilled sour dough bread - makes a perfect quick nourishing lunch w a beer!.....(or have in the fridge & great tossed through pasta for a weeknight meal).
