roasted carrot, parsnip & orange soup

i am not really a fan of carrots but this soup is very tasty.  simply roast 8 carrots, 4 parsnips & 1 leek w olive oil & sea salt.  when roasted brown, put in a saucepan w 1ltr chicken stock, zest & juice of 1 orange & bring to boil.  puree & serve......the orange makes it delicious!

I'm not a huge carrot lover either - not against them just not excited by them. I made a similar soup recently to use up some carrots and pumpkin I'd been given - same roasting method with pumpkin, carrot, red onion and tomatoes. Very nice, but I reckon the orange juice would have lifted that one too.
