to start with i must let you know i did not make everything for this lunch from scratch... the tagine & quinoa salad was made by me! the rest was from oasis bakery. surely i get points for the savvy sourcing and assembling!? i was told about oasis bakery by a family friend...the next day i was there with a full shopping trolley, lunch from the cafe for the family and a head exploding with menu ideas.
oasis bakery is a mixed business all under the one roof offering middle eastern bakery goods, cafe (you must try their shawarmas!) and a huge range of nuts, herbs, spices, middle eastern groceries, sweets, snacks...take home meals...the list goes on!
when i invited my friends i tested the water by asking if they like middle eastern food...the response was something to the effect "who doesn't!"...so the menu planning began.
the lunch menu...to start

lebanese pickles, pickled turnips & hot pickled peppers

tri coloured quinoa w toasted almonds, parsley, lemon, olive oil & salt/pepper
condiments...harissa, tahini & lemon
sweets...
rose water turkish delight, vanilla halva & strong coffee...or more wine

oven baked haloumi filled parcels (from oasis bakery)

toasting the almonds for the quinoa salad...
quinoa salad w parsley, toasted almonds, lemon juice, olive oil & salt/pepper
barramundi tagine w chickpeas, smashed green olives & preserved lemons
recipe...
tagine ingredients...3-4 barramundi fillets, 3 tlbspns 'oasis bakery' tagine spices, olive oil, potatoes qtrd, 1 cup pitted green olives, can chickpeas, 3 gloves diced garlic, 1 sml chopped brown onion, can chopped tomatoes, 1/2 preserved lemon diced, 1ltr fish stock, salt & pepper.
tagine method...fry onion & garlic in olive oil until soft. add drained chickpeas & olives and fry with tagine spices...once combined add potatoes, tomatoes, lemon and fish stock and cover with lid. allow to simmer on low for approx 30 minutes. 8 minutes before serving add fish pieces, cover with tagine juices & replay lid for approx 5 minutes. test the fish before cooking and then serve.
