this year is our first year living in melbourne & experiencing first hand a footy (AFL) grand final. i wanted to cook something that could possibly become our familie's 'footy food tradition'...the perfect grand final food! there was talk of a classic home-made burger w cheddar & smokey bbq sauce...nnnaahh...we then tossed up the idea of pizzas...mmmm nooo...then meatballs came to mind in a tangy napoli sauce & served in a italian ciabatta roll with rocket & grated pecorino. DONE! it was super tasty, satisfying & perfect with beer.
pork & thyme meatballs w napoli sauce in ciabatta roll w rocket & grated pecorino
make meatballs to your liking (i used pork mince, thyme, egg, garlic, onion, s&p)
make a napoli sauce & then allow meatballs to simmer until cooked
fill ciabatta rolls w meatballs, dollops of sauce, rocket & grated pecorino
serve, washed down with your choice of drink & the roar of an exciting footy game!
