peasant pasta


  
i was caught out last sunday & monday with many shops closed for the public holidays...our fridge was down to its bare minimum & our pantry was just hanging in there.  by sunday lunch time my little family were all still clad in pj's & the subject came up of "what's for lunch?"...  i have made this pasta before but forgot how little ingredients you need, how simple it is to prepare & the girls love it so that is always a massive plus!
peasant pasta (when the cupboards are bare)
ingredients - 3/4pkt 500g good spaghetti, 1 cup of breadcrumbs, 4 finely sliced brown onions, 1 cup pitted black olives chopped (ligurian or kalamatta), several chopped garlic gloves, 3 lemons, finely chopped parsley or basil, parmesan, extra virgin olive oil, cracked pepper, sea salt flakes
prepare - in a pan brown & crisp the breadcrumbs with a little olive oil (set the crumbs aside in a bowl)...in a clean pan fry onions, garlic & olives with olive oil on low heat for approx 15 mins until soft/brownish...cook spaghetti in salted water until al dente...in a large serving bowl place drained spaghetti, onion mixture, 3/4 of the bread crumbs, squeeze lemons over, chopped parsley, cracked pepper, a little salt (as the olives will add salt too) + a good drizzle of evoo.  toss/mix through thoroughly.  finish bowl off with a good grating of parmesan & the remaining crumbs...serve, enjoy & note as my girls did you cannot suck the spaghetti up as the breadcrumbs coat the pasta...sorry girls!
