my brother in law, simon, loves cheese... on a recent visit to our home (with his wife & their 2 baby boys) simon was elected the bearer of cheese & i did the main course... for years now there has been many a conversation between simon & i about our love for cheese.
simon chose 4 hard cheeses & they were very delicious especially with the little pot of wild honey to dip into... so delicious that the guests all stated that they would happily eat cheese all afternoon!...isn't that the way though the nibbles always win over the main course! i don't think there is anything wrong with a cheese platter as the main meal w plenty of good vino!
simons cheese selction included (from the top) - manchego, aged reggiano, pecorino & king island aged clothe bound cheddar.

What?! I haven't heard of cheese and dipping honey! I obviously don't get out enough. I am intrigued... and looking forward to trying this. Is it best used with hard cheese and do you serve this with other foods such as fruit or crackers? Enjoying the beautiful photographs! Thanks, Ainslie
