the business i work for recently received a new italian shipment....whenever i see a container in the warehouse driveway of visco (my work) i wonder...."what's this one got inside?..." a recent shipment contained fregula - from sardegna. large oven toasted semolina balls. cook up with stock, serve as a wet bed for fish/poultry etc..... they are rustic and delicious. one client is serving them with roasted rabbit, pitted ligurian olives & lemon.....i love my job!
