rocket w buffalo mozzarella, caramelised onion & toasted ciabatta

i made this entree the other night and it was a huuuggee hit!  i get the imported buffalo mozzarella from work http://www.viscofoods.com/ and thaw it out.  decorate a large platter w wild rocket leaves, tear up buffalo mozzarella and place on top of the rocket.  i caramelised 2 bags of brown onions w balsamic vinegar, olive oil, sea salt & brown sugar.  when onion was cool place over the buff mozz, drizzle with olive oil, crack pepper & use flaky sea salt.  grill your ciabatta on a grill plate and serve......really simple and really delicious.  for dessert i made sophie grigsons fool proof italian choc almond torte - served with dollop cream it was heaven......i don't want to talk about the main course!!!  the veal marsala was just not up to sratch however eaten by my polite guests.
